An Homage to the Dirty South….

So for a Yankee I have a really strange obsession with Mexican and Southern foods. I think I was always supposed to be a Texan. It’s the best of  both worlds. Peaches, biscuits, fried  chicken, tacos, tortillas..!!!

Inspiration for this taco wasn’t hard to find. As hatch Chile season is coming to an end here it was an easy pick!

If you’ve never tried these you are missing out on some amazing flavor!! There’s really nothing like them. The season this year was short but so sweet!

What goes well with green chiles other than everything? Fried chicken! Panko crusted chicken nuggets!

We had hashbrowns leftover from the cheeseburger gravy and biscuits so we tossed some of those in the bottom of the tortilla, flour of course.

Topped with cheese and more chiles and biscuit crumbles!!

We are calling this the Southerner! Enjoy!!!! It’s like the best of the culinary worlds combined!

Have you ever had Mexican street corn? Esquites! Corn freshly cooked and layered with crema, chili powder, cotija cheese, and mayo! Sold in parking lots and farmers markets across Texas and the country. Fantastically delicious
