Does anyone else remember that dorky holiday special??
Now that I got that stuck in your head we can move on to the food! We got a fancy new piece of equipment! Ok so it’s not super fancy but it’s still pretty awesome. We purchased this baby at a thrift store for $7! Pretty excited to play with it.. so that’s what we are doing today!

Our fist waffling mix we made up is a jalapeno cheddar cornmeal mix! We wanted something cheesy and spicy to pile some of Jake’s famous pulled pork on to!
These got smothered in cheese and topped with what we are calling BBQ Syrup. A Maple Syrup infused with Jake’s homemade BBQ sauce.
After topping with cheese we put this beautiful platter of yumminess into the oven to get its melt on!
Topped with more bbq syrup, chopped onions and cilantro!
While the BBQ waffles were in the oven we made some pan roasted pineapple salsa verde for our next waffle.
We blended this in the food processor with some of my famous salsa verde or as Jess calls is green crack!
Now that we finished that let’s move on to more waffles! Im sure we are getting predictable and I know by now you all know how much we love tacos, so naturally… taco waffles had to happen!
First we started cooking some sausage and poblanos with onions added beaten eggs to make a scramble.
For these we just went with a standard waffle mix for these. Nothing too crazy. We made 2 different waffle tacos.
- Breakfast of champions with andouille sausage, eggs, cheese and potatoes.
The 2nd is A Pizzaffle! A pizza waffle! Pretty much the same as the above on just with pepperoni and mozzarella!
We also just because we had some really good freshly made flour tortillas made up some Austin style tacos.
Our last dish we decided to make are a brunch appetizer I serve to my clients. Mini pancakes on a stick!
Obviously these were yummy!
