Tex-Mex or Mex-Tex?

Logo_web_cuadradoTostados and Taquitos!

Howdy! Tostadas are awesome… but what are they?  The official definition of a tostada is:   “a Mexican deep-fried tortilla topped with a seasoned mixture of beans, ground meat, and vegetables. ” We see these all the time on every Mexican/Tex-Mex combo platter ordered in restaurants. Always kinda boring… never exciting. So let’s change that. These things have been long neglected.

When you think about taquitos what’s the first thing that comes to mind? 7-11 or those weird ones you get in the frozen department of your grocery store? I love these things don’t get me wrong but I think much like the tostadas problem we should improve on these items. No more boring bland taquitos I say!  What is a taquito some of you may ask.. “a Mexican dish consisting of a small tortilla rolled around a filling of meat and cheese and deep-fried.”! When ever I have ordered these in a restaurant they are always so dry and I dunno just not good. Not saying there are not some good ones out there just the majority..well suck.

First we started by buying our shells and tortillas. We would have made them but we wanted to concentrate on the fillings and toppings. We went to our nearby Mexican grocery store where they make their tortillas fresh. The packages we picked up were so fresh they were still hot! Gotta love that! I’d say that’s a giant perk of living in Texas. We also grabbed some produce items and some seasonings.  Keep in mind that shopping in your local ethnic stores is way more affordable than your regular grocery store.  We walked out with 4 bags of stuff for less than 12 dollars. Good food doesn’t have to be expensive!!!

For today’s cook day there were 3 of us as usual in the kitchen so we each designed a tostada and a taquito each.

Let’s start with Jake’s in typical Jake fashion he opted to make a bbq chicken tostada. First he rubbed the chicken with some Memphis style rub that I had made for a previous dish.  He then just cooked it through in a saute pan and then sliced it up.

Next we cut up some bell peppers, we bought a bag of those mini ones just for the fun of it and figured the small slices would look great on the tostados.

He decides that the rest of his tostada would be refried beans and cheese, then drizzled with a little bbq sauce.

On to mine! Being from New York I love putting apples in foods that you don’t expect it. One of my favorite pairings is apples and steak. I know most people think of apples with pork.. but trust me.. this works! As far as steak goes I’m a ribeye girl myself. How about you?   I just happened to have a good sized hunk of ribeye in the fridge from dinner the night before.  So I sliced it and reheated it low and slowwwly in bacon grease and apple cider.

While the steak is warming up I chopped up some apples and threw them into the skillet when I took the steak out.  I sprinkled the apples with brown sugar and a shot of bourbon and let them caramelize.  Being that I am pairing steak with apples I think its only natural that I top this beautiful tostada with some super extra sharp cheddar cheese, made in NY of course.  Before I put the cheese on this I top with a little cinnamon ginger pecan butter I made.

Jessica’s tostada was super fun! She opted for a triple layer with everything in it.  Each layer had each meat, cheese, and toppings. With extra extra cheese!!

Taquito time! Again 3 different ones! Let’s start with Jessica this time!

She found this awesome corn and black bean salsa at Trader Joe’s cowboy caviar or something like that.  She mixed it into some cream cheese and shredded  cheese. Slathered it on and rolled it up!

For mine I took more steak, cream cheese, blackberry jam, jalapenos and more shredded  cheese.

Jake’s was a bbq chicken pork chili refried bean combo.  Into the oven everything goes!

Why don’t you try making your own? We LOVED ours! Don’t forget the queso and guacamole for dipping!!

We entered a contest!

“The Chefs’ Roll Art of the Plate Contest sponsored by Cardinal International family of brands: Chef & Sommelier, Arcoroc, and Tiger-Glass had hundreds of chefs from across the US participate to receive a free dish, or canvas if you will. Once received, they plated their most stunning dish and entered a photo of it via our online contest.”

We entered! We received a bowl and a wine glass in the mail to use. We got the tall white bowl on the top row.  Since we are kinda casual we weren’t sure what to make. So we brainstormed and chose a soup.  But in typical Holyshitnomz fashion we had to make something else too. What goes better with soup than grilled cheese sandwiches? Nothing my friend.

Menu:

  • Thai butternut squash peanut soup
  • brie and pear bagel sandwich
  • Extra sharp cheddar apple bagel sandwich

We started with the soup.  We were pretty stoked to be making something different.  A little lighter than our usual menus! This soup is full of yummy ingredients like butternut squash, carrots, onions, garlic, and spices!!

After getting all those delish vegetables prepped we sweated them out in a pan with extra virgin olive oil. Get all those good flavors going.

After the veggies were getting going we added some Madras curry powder, cayenne, and cumin! Always cook your curry for a few in the oil to bring the full flavors out! No bland curry here!!

Then we added the broth and the squash and carrots then it was simmer time!

The soup needed to simmer for about 45 minutes. So during that time we started the prep work on our bagel-whiches.

Maple black peppered bacon from HEB is pretty good! The Tillamook extra sharp is pretty awesome.. I mean seriously awesome if you like the crystals and crumbly kind of cheddar with a sharp taste.. definitely try it!

Putting the bagels together with all the yummy ingredients was pretty fun!

The soup at this point is almost done. We puree it and start setting up for plating!

Ready to see how we plated everything? 😀

Tah-Dah! Below is our entry photos! Everything was really really good! But we are ready to go back to our holyshitnomz style!

What do you think? Pretty enough to win?

Here we go a waffling…

Here we go a waffling…

Does anyone else remember that dorky holiday special??

Now that I got that stuck in your head we can move on to the food! We got a fancy new piece of equipment!  Ok so it’s not super fancy but it’s still pretty awesome. We purchased this baby at a thrift store for $7! Pretty excited to play with it.. so that’s what we are doing today! IMG_7697

images

Aren’t you excited??

Our fist waffling mix we made up is a jalapeno cheddar cornmeal mix! We wanted something cheesy and spicy to pile some of Jake’s famous pulled pork on to!

IMG_7704

These got smothered in cheese and topped with what we are calling BBQ Syrup. A Maple Syrup infused with Jake’s homemade BBQ sauce.

IMG_7706

After topping with cheese we put this beautiful platter of yumminess into the oven to get its melt on!

IMG_7719

Topped with more bbq syrup, chopped onions and cilantro!

While the BBQ waffles were in the oven we made some pan roasted pineapple salsa verde for our next waffle.

IMG_7685IMG_7686

We blended this in the food processor with some of my famous salsa verde or as Jess calls is green crack!

IMG_7709

Now that we finished that let’s move on to more waffles! Im sure we are getting predictable and I know by now you all know how much we love tacos, so naturally… taco waffles had to happen!

First we started cooking some sausage and poblanos with onions added beaten eggs to make a scramble.

IMG_7695 IMG_7698IMG_7701IMG_7703

For these we just went with a standard waffle mix for these. Nothing too crazy. We made 2 different waffle tacos.

  1. Breakfast of champions with andouille sausage, eggs, cheese and potatoes.

IMG_7715IMG_7702

The 2nd is A Pizzaffle! A pizza waffle! Pretty much the same as the above on just with pepperoni and mozzarella!

IMG_7725IMG_7716

We also just because we had some really good freshly made flour tortillas made up some Austin style tacos.

IMG_7733 IMG_7735

Our last dish we decided to make are a brunch appetizer I serve to my clients. Mini pancakes on a stick!

IMG_7740 IMG_7712IMG_7710IMG_7747

Obviously these were yummy!

Until next time! Do you have any waffle recipes you want to share?!

Return of the Mac or Perhaps the Mac Attacks!

Hey everyone!! It’s macaroni and cheese day!! As you probably have figured out by now we are obsessed with things like bacon, cheese, nachos and the like….
image

So let’s keep this theme going. We choose to do a macaroni and cheese day. Taking a few of our favorite things and squishing them together into something awesome. Pure awesomeness really.   Grilled cheese has not been addressed yet in our blog. I know we all have heard about some of the amazing grilled cheese food trucks out there across the country, even in Chicago there is a restaurant/bar devoted solely to booze and grilled cheese! Genius!! The one here is pretty darn good too. These creative chef’s take something already awesome and stuff even more awesomeness into the sandwiches and are making a killing! So we decided to take a stab at making some of our favorite versions and try and create our own.
image

We started by making a huge pot of cheese sauce and cooking up some pasta. We went with tri-color spirals just for some fun and pizzazz.
image

image

Jake has a serious addiction to chili dogs and cheese so our first creation involved Jake’s super good pork and beer chili, sliced hot dogs, cheese AND macaroni and cheese. We opted for some pretty plain white grocery store shelf bread so that we could focus on the ingredients. Buttered both sides with real butter and got to grilling! I not being a chili dog fan have to say that this was a whole lot of deliciousness.  It was so oozy and gooey it’s hard not love it!
image

image

image

The 2nd one we made was what we will call the Mac Attack we stuffed this one with nothing but cheese and our homemade macaroni and cheese! Simple, delicious and messy!! We make some pretty killer cheese sauce!
image

The 3rd and last one was another simple one. We took the Mac Attack and I know you were worried it wasn’t going to happen but… BACON! Absolutely tasty!!
image

image

So because as if those 3 sandwiches weren’t enough to clog your arteries we were feeling a little wild…so what happens when we get bored with food?? We make nachos!!!!

image

image

MACARONI AND CHEESE NACHOS!!!!!

Yeah that’s right… you read that correctly…. we took tortilla chips and layered them with macaroni and cheese, Jake’s chili, bacon, hot dogs, and more cheese….and then probably even more cheese….

SO GOOD!!!!

Oh yeah we put Mac and cheese on biscuits too 😋😋😋👏👏👏🙌
I strongly suggest you get into your kitchens right now and whip up some mac n cheese and get creative! We want to hear about what you make! Please share! 😀

Tony Soprano goes to the food truck park…

image

Thinking about Italian food yet? Well, you should be! No reason to call the cops Tony is just stopping by to eat!
image

Although this cook day was yummy enough to alert the authorities!

Can I just tell you how much fun Jessica and I are having with this project? Playing with food with friends is absolutely what everyone should be doing at least once in awhile.

Italian food. I grew up in NY (upstate, not the city) in a very Italian family. Italian food was ALWAYS around and available… It’s NY after all! So I am very spoiled when it comes to that genre of food. On top of being a NYer I lived in the other great Italian food city Chicago! So, imagine how hesitant I am about eating Italian food in Texas. Well friends 15 years later into life in Texas and I haven’t been impressed by any of the “Italian” eateries here.

So, what’s a girl to do? Cook her own of course.

image

Jessica and I decided for this cook day to get inspired by some of our favorite foods. Lasagna, nachos, pizza, wontons, egg rolls and the like.

We cooked 3 things today. Italian nachos (big surprise right?), lasagna wontons, and pizza egg rolls!  I know, I know you’re saying what the what?! But stay with me here.

Let’s start with lasagna wontons! We took all of the favorite lasagna ingredients and stuffed them into wonton wrappers and deep fried them!

We just used purchased wonton wrappers, easily found in any grocery store.

image

Pesto sausage from Trader Joes; not pretty but very tasty!

I have a deep love of cherry peppers so we added them too, on top of copious amounts of cheese! Habanero cheddar, mozzarella, and ricotta!

image

image

image

We played around with different folding techniques and settled on corner to corner and also some “purse” shapes!

image

Eggrolls next! Again we just used a purchased spring roll wrapper.

image

image

These are to be filled with pizza toppings, whatever you fancy! We chose mushrooms, pepperoni, cherry and banana peppers, cheese, and some more pesto sausage.  Oh and bacon!!

image

image

image

image

image

image

Roll these bad boys up and toss them into the fryer until GBD!

image

image

Dip these into some spicy ranch…. OMG!!!

Full yet?? Let’s talk Italian nachos! Yesss….yesss….Yes!!

image

Fried sheets of pasta as chips!

image

Topped with a tomato brushetta mix as our salsa, all of our pizza toppings add meatballs!! We baked this until the cheese melted then added sliced basil leaves!

So.. The next time you see Tony, thank him for the food truck tip off!

Enjoy!! 💋
